Caponata is a Sicilian dish consisting of chopped fried aubergine and other vegetables, seasoned with olive oil, tomato sauce, celery, olives, and capers, in an agrodolce sauce.
The Mediterranean flavours will be excellent with cheese and anti pasti platters, on baked potatoes, bruchettas, crostinis and sandwiches. Mix with cottage cheese as a dip or use a stuffing for chicken breasts. Add flavour to stirfry and pasta dishes.
