Spelt (Triticum spelta) is an ancient cereal grain that is related to wheat. It is thought to have originated in the Middle East over 5,000 years ago and was widely cultivated in Europe during the Middle Ages. Spelt is now gaining popularity again as a healthy and nutritious alternative to wheat.

Spelt has a number of advantages over wheat. It is more easily digestible, has a higher nutrient content, and is more resistant to pests and diseases. Spelt is also a good source of gluten, but spelt gluten is less elastic than wheat gluten, which makes spelt baked goods more tender and crumbly.
