Porridge
The easiest and fastest recipe. Good for quick and nutritious breakfasts (makes 4 servings).
Ingredients
- 1 cup green banana flour
- 4 cups water
- 1 cup milk
- vanilla essence
Method
- Mix in a cup of water in the flour not to get lumps.
- Add the rest of the water.
- Keep on mixing with a wooden spoon until it gets thick.
- Add the milk and keep on stirring and cooking for about 5 mins.
- Add vanilla essence.
- Serve with anything you like, honey, fruits and nuts.
Easy Wraps
Creativity comes alive with toppings in an easy wrap, tortilla or as a crispy pizza crust (makes 16 small wraps).
Ingredients
- 2 cups green banana flour
- 1 tsp xanthan gum
- 1 tsp onion powder (optional)
- 1 cup and ½ cup hot water
Method
- Knead for about 2 mins to make a smooth bouncy dough.
- Keep the dough just before sticky but not to dry to make a soft moist wrap.
- Cut it in 16 pieces and roll out with a rolling pin.
- Use a bit of green banana flour or corn flour to avoid sticking.
- Cook it in high heat. When it bubbles up, flip and cook the other side. Around 1 min each.
(lovely fresh, reheat 10 seconds in the microwave if it cools down)
Chewy chocolate chip cookies with coconut oil
American style, huge, chewy cookies. Indulge and spoil yourself (makes 25–30 cookies).
Ingredients
- 3/4 cup coconut oil (liquid form)
- 2 tsp vanilla essence
- 2 eggs
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 cup + 2/3 cup green banana flour
- 3/4 tsp kosher salt
- 1tsp baking soda
- 1 heaping cup chocolate chips
Method
- Heat oven to 190 ºC.
- In a large mixing bowl, combine liquid coconut oil, vanilla, eggs, sugar, and brown sugar. Whisk to combine.
- Add flour, kosher salt, and baking soda to bowl and stir until ingredients are incorporated and you have a smooth dough.
- Fold chocolate chips into the dough until they are evenly distributed.
- Line a large baking sheet with a silicone baking mat or a sheet of parchment paper.
- Use a large cookie scoop to scoop dough, and place dough scoops 3 cm apart on the baking sheet.
- Bake cookies for 9-12 minutes until lightly browned. Remove to a wire rack to let cool.
- Serve cookies immediately or let them cool completely and then store in an airtight container on the counter for up to a week.
Chocolate muffins Cafe style
These muffins are big and delicious! Enrich taste with chocolate chips or melted chocolate in batter.
Ingredients
- 2 cups green banana flour
- ½ tsp xanthan gum
- ½ cup (50 g) cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 cups (300 g) granulated sugar
- 1/2 tsp salt
- 2 eggs (room temperature)
- 1 cup (250 mL) milk, room temperature
- 1/2 cup (125 mL) oil
- 1 tbsp banana cider vinegar
- 1 cup (250 mL) boiling hot water
Method
- Preheat the oven to 180 ºC.
- In a large bowl, sift together the green banana flour, xanthan gum, baking powder, baking soda and cocoa powder.
- Add the granulated sugar and salt, and whisk well.
- Add the eggs, milk and oil. Whisk well, until you get a smooth cake batter.
- Add the boiling hot water, and whisk until you get a runny cake batter with no lumps.
- Fill in the muffin tins full to get the dome muffin look.
- Bake for 15-20 minutes. Don't open the oven for at least 15 min.
Fluffy Banana Muffin
Tea-Time Special. Batches freeze well. Pop them in the microwave and have them any time you want.
Ingredients
- ½ cup coconut oil or butter
- ½ cup sugar
- 2 eggs
- 4 bananas
- 1 ¼ cups green banana flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla essence
Method
- Preheat oven to 180 ºC.
- Cream together oil( butter) and sugar.
- Add eggs and crushed bananas.
- Combine well.
- Sift together flour, baking soda, and salt (I do it twice).
- Add to creamed mixture. Add vanilla.
- Mix just until combined. Do not over mix.
- Pour into muffin pan.
- Bake at 180 degrees for 20 minutes or until poker in centre comes out clean.
Flapjacks
Recommended Dad’s Sunday easy breakfast. Banana with chocolate sauce is a hit with the kids (makes 6 large flapjacks).
Ingredients
- 1 cup green banana flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp sugar
- vanilla essence
- 1 egg
- 1 cup milk
Method
- Mix all dry ingredients
- Mix in egg and milk and essence
- Medium heated non-stick pan, pour the mixture with a ladel
- Flip when you see small bubbles
(Don't cook too long, or flapjacks will get hard)
Brownies
Kiddies Favourite - Healthy cake sale brownies Moms!
Ingredients
- 1 cup (200g) coconut oil (or normal oil)
- 1 cup (300g) sugar
- 4 eggs
- vanilla essence
- 1 cup (150g) green banana flour
- ¾ cup (60g) cocoa powder
- a pinch of salt
Method
- Melt the coconut oil and mix with sugar.
- Add eggs and vanilla and mix well until a bit fluffy.
- Add flour, cocoa and salt and mix.
- Bake in 160 ºC for 20mins.
Tempura crispy onion rings
Fail-proof batter! Crispy Tempura with zero sogginess! No eggs needed so it is suitable for vegans too.
Ingredients
- 1 cup green banana flour
- 1 tsp onion powder (optional)
- 1 cup + ¾ cup water
Method
Mix the green banana flour and water.
If it is too runny put more flour, if it is too thick, put more water.
Don’t need to worry about over mixing or having ice cold water.
