This is my mom Regina's recipe for flap jacks that I am making with your gluten free flour. She used to make it with wheat flour so it is easily adaptable. I use more milk in mine to get the right consistency.
My mom used to make it as a treat for us on the occasional Sunday evening with syrup, bovril and/or grated cheese. It was a hit in our house then and is a hit in my house now.
Ingredients:
Whisk eggs and sugar. Add the milk and margarine. Add the other ingredients and mix well. Fry tablespoons fulls in a hot pan with a little bit of oil.
The recipe can and should be halved for small families otherwise you end up eating too many!
